Thyme (Thymus) is a genus with more than 350 different species that is widespread in Europe, the Middle East and North Africa. It is aromatic fragrant perennials or half bushes with thin or thread-like stems, which are square in cross section and finely hairy. The leaves are opposite, and they are oval, whole, entire margins and often evergreen. The flowers are assembled in compact, terminal heads. The individual flowers are irregular with white, pink or purple petals, and can be eaten. The fruits are nuts.

But it is the Garden-thyme (Thymus vulgaris), we use as a seasoning. Smell heavily of the plant essential oils, which make the disease and inedible for herbivores. Because of these essential oils the plant has been used in medicine and cooking for thousands of years.
